Brett's Salsa
The INGREDIENTS:
- 2 large onions, diced
- 1 small can black olives, chopped
- 1 small can black beans
- 2-3 cloves of garlic, diced
- 3 large bell peppers, diced
- 3 large tomatoes, diced or use 1 large can diced tomatoes
- 3-4 cherry peppers, chopped
- 2-3 Cayenne peppers, chopped
- 1-3 Habanero peppers, chopped
- 2-4 Jalapeno peppers, chopped
- 1/2 to 1 small can Tomato Paste
- 2 Tablespoons cider vinegar
THE PREPARATION:
Throw everything into a bowl and toss together.
Serve with tortilla chips or on hamburgers and hot dogs, or along with chicken
and pork dishes. Livens up anything you want to spoon it on.
**Bretty's one of those cooks who never measures much
of anything. Just takes a gander around the kitchen and starts tossing things
together without a thought someone might want to know what he's doing and how
he's doing it. The above recipe can be modified to fit any size crowd. Like the
large Tollefson family, our family likes to make salsa in mob sized quantities.
It's gone before the movie ends . . . and somebody's hollering, "Hey! I
didn't get any of that! Brett! Go make some more!"
**You can fold in 1/4-1/2 cup sour cream for another variation.
**If you're a green olive lover and I am toss in a
small jar green olives, chopped.

Something in her mother's tone recalled to Thomi's mind the promise she'd made
him. Her stomach queased at the thought, but she
suppressed it, and started out to find him.
She saw him from the porch, sitting with Matt Kelmann and his girl
at one of the end tables. Stephan had kept a
seat beside him open for her, and after filling a plate, she joined them.
Matt, as redheaded as Stephan, greeted her
enthusiastically. "Hey, 'bout time you got out here! I've got your man here
almost convinced to be my co-driver next race!"
"Oh, and you think Joleigh'll
give up her spot as navigator to him willingly, do you? I think not! We'll come
and watch, though. Could you pass me those jalapenos, please? And that salsa,
too, if you don't mind, sir! You have any of this? Brett's specialty,
you know!"
"Yes, I had some. Don't you people believe in mildness?" Matt passed them
to her, and as she took the bowls from him, he remarked, "Heard someone say
you're giving up the play, Thomi. What's up with that?"
This was not a discussion she wished to embark upon just then. She answered,
"So—how fast did you get back into the driver's seat after that crash you
were in a year ago? Laid up for six months, weren't you?"
"So I was," he agreed. "And damned impatient to get
back into my races, too! You tell Marsha or David yet?"
